Eat Your Greens

This week was a very moody week in terms of weather (today is the first day since I have been here that it even resembles winter of any sort). I am NOT complaining, in fact I might be enjoying the rain a little too much. Reminds me of home. Plus we really, really needed it here.

This week we finally splurged and bought a NutriBullet – which has been so fun. It was totally Cory’s idea (he hates leafy greens, so we found a way to “cheat the system”) and we are totally having way too much fun thinking up new recipes and trying them out. It’s only been a couple days, but we are going to try to do at least one a day. So far, so good. (here is one of our faves so far)

Our weekend consists of some shopping, errands, and a TV marathon on Sunday night (followed by a late night recap of the Oscars).

Sweet potatoes!

As I have mentioned before, I am trying to eat a healthier diet. With that said, I have been trying to find healthier takes on some of my favourite meals. One of my favourite foods is mashed potatoes. Even though potatoes are not bad for you, because they are high in starchy carbohydrates and low in protein I try not to make them a common staple in my diet. However, I have started eating mashed sweet potatoes! Of course not the same recipe as your grandma probably makes at Thanksgiving coated with brown sugar and marshmallows. I just keep it simple, adding herbs or spices or sometimes just some margarine. It fills the same craving as regular mashed potatoes yet sweet potatoes are a lot healthier. Sweet potatoes are low in calories and have no fat. Also they are rich in beta-carotene, vitamin A, and potassium. I also have found that I like it better without adding any cream because sweet potatoes are already pretty sweet.

Classic Chicken Salad Sandwich

Though I am much more of an entree dish type gal, sometimes paring down with a good classic is much needed. I liked the twist of adding olives to a simple chicken salad – it gave the recipe just a little something extra without tacking on extra prep time or expensive ingredients. Filling all on it’s own this sandwich would also pair well with a side of creamy tomato soup. Yum!

All You Need:

2 slices multigrain bread
3 oz. cooked, skinless chicken breast (cut into bite size pieces)
1/4 cup of chopped celery
1 tbsp light mayonnaise
4 olives, chopped
2 lettuce leaves
1/3 tomato, sliced thinly

All You Do:

Combine diced chicken, mayo, chopped celery and diced black olives. Layer the lettuce, then tomatoes and chicken mixture to create the sandwich.
